Vegan Pasta Dinner



Okay, so I really can't take a ton of credit for this meal, because the main component came out of a bag. Nonetheless, it was really really yummy. The butternut squash ravioli are vegan and I found them in the frozen hippie-food section at Jungle Jim's. I cheated again with the toppings and smothered them in Kirkland basil pesto and vegan Parmesan.  


The veggies are really the only part that I can actually take credit for, but those were fairly easy to throw together too. I baked the fingerling potatoes in olive oil, vegan Parmesan, and rosemary. I steamed the broccoli with just a little salt and pepper. The peppers and asparagus got thrown on a piece of foiled and tossed in olive oil and salt and pepper and then put on the grilled.
