Pre-Derby Departure Dinner

I am heading down to Kentucky for the Derby, and I figured I would take full advantage of my last night in the kitchen before I leave. 


I have been absolutely craving zucchini noodles, so I knew I was going to have to make something with them when I got home. I sauteed my zoodles in a little olive oil and seasoned them with some salt and pepper. Then I sauteed my other veggies (broccoli, spinach, and asparagus) in another pan with some olive oil and some light seasoning. 


 I also decided to saute some shrimp in some spicy seasonings to give the dish a little kick. I topped the whole thing with dairy-free Parmesan.
