Gluten Free + Vegan Pancakes
This morning I was just really craving some hot cakes for breakfast. These guys are made with Bob's Red Mill GF pancake mix. I substituted the milk for unsweetened vanilla almond milk and the butter for coconut oil. I used eggs for the recipe, but if you want to opt for completely vegan cakes you can use applesauce or flax eggs. I also threw a little splash of vanilla and some sprinkles of cinnamon and nutmeg into the batter.
I topped my with melty Enjoy Life chocolate chunks and Justin's almond butter for a Reese's-like taste. I also added a little Simple Truth maple syrup and some fresh fruit to just go into a full-blown natural sugar coma.
